Here are some thoughts regarding Thanksgiving leftovers.

Turkey soup: Pick the meat off the bones to first make a turkey broth. Use the broth to make turkey soup.

Turkey Broth

Put the leftover bones into a large stock pot and cover with water. Add any drippings that weren't used to make gravy. Add chopped celery, carrots, and onion. Season to taste with salt and pepper. used already. Bring the broth to a boil and reduce heat to a low simmer.

Simmer uncovered for 4-6 hours. Skim the foam that comes to the surface. Add water as needed. When finished, remove the bones and strain the stock. Discard the onions, carrots, celery, and bones which will now be quite mushy. If the stock tastes weak, you may supplement it with canned chicken broth.

Turkey Soup

Add chopped carrots, onions, and celery to the stock. Season with a bit of sage, parsley, and a clove or two of minced garlic. Cook the soup until the vegetables are tender. Add leftover mashed potatoes or boiled egg noodles or wild rice mix. You could also slice up leftover roast turkey and add this to the soup.

Here's another idea.

Make a turkey burrito.

Get a package of flour tortillas. Heat the tortillas in the microwave for at least one minute to make them soft. It's easier to roll a burro when the tortillas are pliable.

Mix dressing with gravy, mashed potatoes, and diced turkey. Heat the mixture in the microwave.

Place the filing on the edge of a tortilla. Fold the ends in and roll it up.

For a more "south of the border" flavor stuff a flour tortilla with a mixture of:

* warm fried potatoes and onions
* warm sliced turkey
* diced tomatoes
* shredded cheddar cheese
* shredded lettuce
* salsa

If you use warm potatoes and turkey, the heat will melt the cheese. As an alternative, you can zap the burrito in the microwave for 30 seconds. Be careful about overheating the burritos as you really don't want to cook the lettuce.

Sweet Potato Pie

This is a great way to use leftover sweet potatoes.

INGREDIENTS

* 1 (1 pound) cooked sweet potato
* 1/2 cup butter, softened
* sugar as needed
* 1/2 cup milk
* 2 eggs
* 1/2 teaspoon ground nutmeg
* 1/2 teaspoon ground cinnamon
* 1 teaspoon vanilla extract
* 1 (9 inch) unbaked pie crust

DIRECTIONS

1. Mash the cooked sweet potatoes. Add butter. Stir in milk, eggs, nutmeg, cinnamon and vanilla. Add sugar to taste. Mix until the mixture is smooth. Pour the filling into an unbaked pie crust.
2. Bake at 350 degrees F for 55 to 60 minutes, or until knife inserted in center comes out clean. The pie will puff up like a souffle, and then will sink down as it cools. Serve with whipped cream.

Cranberry Jello

Use up leftover cranberry jelly or cranberry dressing by mixing it with strawberry jello mix. Jazz it up with drained fruit cocktail and freshly sliced bananas.

Put the fruit in ramekins, custard dishes, or a casserole dish. Mix the cranberry jelly or dressing mix into the strawberry jello and pour it over the fruit. Refrigerate it until it sets.

Turkey Pot Pie

* 1 to 1 1/2 cups of diced turkey
* 1 1/2 to 2 cups of thick turkey gravy
* 1 cup of diced and mixed cooked vegetables
* salt and pepper to taste
* 9 inch pie crust

Mix the ingredients together. Pour them into the pie crust. Add the pie lid. Bake at 350 degrees Fahrenheit until golden brown.

Here's one...

Turkey Casserole...

Take any left over turkey & put it in an 8" x 11" baking dish. Mix together one can of cream of mushroom soup, one can of cream of celery soup, and one cup of milk. Pour over the turkey. Put leftover dressing over the soup mixture (if you have any). If not... take a box of stove top and pour on top of soup mixture. Pour one cup of water on top of stove top (not on top of other dressing.. it's moist enough). Bake at 450 degrees for about 25 minutes.

Turkey Curry

The secret to cooking a tasty Indian curry is the sauce.

McCormick makes a yellow curry powder that has absolutely no bite to it. You can spice it up with hot sauce and/or Old Bay Seasoning.

Ingredients:

2 cups of diced cooked turkey
1 can of chicken broth
corn starch (as needed for thickening)
1/2 cup of shredded carrots
1 onion, sliced
vegetable oil as needed (about 2 tablespoons)
1 clove of garlic, minced
4 tablespoons of creamy peanut butter
3 tablespoons of curry powder
hot sauce or Old Bay seasoning (to taste)
salt and pepper (as needed)

Cook the onion and garlic in vegetable oil over low heat until golden brown. Add the broth, peanut butter, and curry powder. Simmer for at least 15 minutes. Thicken with corn starch. Season to taste with salt, pepper, hot sauce, and Old Bay seasoning as needed. Add the turkey. Serve over steamed white rice.

For a more creamy sauce, add additional peanut butter.

Turkey Pasta Alfredo

2 cloves of garlic, minced
1 pint of heavy cream
1/2 cup of grated Parmesan cheese
1 onion, minced
3 tablespoons of butter
1 cup of chopped cooked turkey
salt and pepper (to taste)
optional: 3 tablespoons of minced green onions (for garnish)

Cook the onion, garlic, and butter over medium heat until the onion is translucent. Add the heavy cream. Stir in the Parmesan cheese. Raise the heat to high and stir constantly until the sauce thickens. Season to taste with salt and pepper. Add the turkey. Serve over egg noodles. Garnish with minced green onions.

Crispy Potato Pancakes

Use leftover mashed potatoes to make crisp potato pancakes.

Ingredients:
* 2 cups mashed potatoes
* 1 egg, beaten
* 1 onion, minced
* 1/4 tsp. salt
* 1/8 tsp. pepper
* 2-3 Tbsp. oil

Mix together the mashed potatoes, egg; and onion. Season to taste with salt and pepper.

Over medium heat, heat oil in a medium size nonstick frying pan. Drop about 1/4 cup of the potato mixture into the frying pan, patting it into 4 inch circles that are 1/2" thick. Cook until the bottom is browned and crisp. This will take about 3-4 minutes. Carefully turn the pancake over and cook the second side until brown and crisp, 3-4 minutes.

Here's a nice, south of the border idea. Make turkey quesadillas.

Mix chopped tomatoes, fried onions, diced turkey, salsa, and cheddar cheese together. Put a health serving in a floured tortilla. Fold the tortilla into quarters. Use a small bit of oil or nonstick pan spray and fry each side of the tortilla until it's crispy.

If you plan to make several, spray a baking sheet, place the tortillas on the pan, and brush the top of each tortilla with olive oil or canola oil. (You can also spray them with non-stick spray). Bake them at 425 degrees ... just long enough for the cheese to melt and for the outside of the tortilla to get a bit crispy.

Here's a link to an interesting recipe that uses left over turkey and puff pastry tart shells. (Puff pastry tart shells may be found in the freezer section of most supermarkets).

Turkey Enchiladas

This is an easy to make dish. You can make your own enchilada sauce but the ethnic food section of your supermarket should also have canned enchilada sauce.

Enchilada sauce is basically made by scrapping the inside of a red chili pod and cooking it in boiling water. The sauce is drained and mixed with cornstarch for thickening and is generally seasoned with salt, pepper, garlic, and ground cumin.

To make this simple dish, you will need:

* a package of corn or flour tortillas
* two cans of enchilada sauce
* diced turkey
* shredded cheddar cheese
* optional - fried onions
* optional - diced bell peppers and tomatoes
* optional - drained and minced jalapeno or chili peppers

Assembly is amazingly simple. Zap the tortillas in the microwave for 45 seconds to one minute. This will heat them up and make them more pliable for rolling.

Open a can of enchilada sauce and pour it into a rectangular casserole dish. Spread the sauce evenly along the bottom of the dish.

Place a tortilla on a cutting board. Place turkey along one side of the tortilla. Add optional ingredients: fried onions, bell peppers, tomatoes, jalapeno or chili peppers etc.

Roll the tortilla up starting with the side that has the stuffing. Gently pick it up and place it seam side down in the casserole dish.

Repeat this process until you have filled the casserole dish.

Open the 2nd can of enchilada sauce and pour it over the stuffed tortillas. Sprinkle the top with shredded cheddar cheese.

Bake at 350 degrees for about 30 minutes.

Shepherd's Pie

This is an interesting take on a traditional English dish.

Ingredients:

2 cups diced turkey
1 can of condensed cream of mushroom soup
half cup of milk
2 cups of frozen or leftover mixed vegetables
garlic powder or other seasonings to taste
mashed potatoes

Combine the turkey, cream of mushroom soup, milk, and mixed vegetables in a large frying pan.

Cook until everything is well-blended and heated. Top with hot mashed potatoes.

Optional: top with a slice of Provolone or Swiss cheese. If you decide to add cheese, zap the dish in the microwave for at least 30 seconds to par-melt the cheese.

Turkey Congee

Here is a link to turkey congee (or "jook" as it is known in southern China) is a Chinese rice soup dish. The rice is cooked so long in broth that the grains literally fall apart.

Turkey Sandwiches

I know that most of you are probably familiar with the classic turkey sandwich i.e. turkey, lettuce, sliced tomato and Miracle Whip.

Turkey a la King

INGREDIENTS

* 2 tablespoons butter
* 3 fresh mushrooms, sliced
* 1 tablespoon all-purpose flour
* 1 cup chicken broth (or turkey broth)
* 1/2 cup heavy cream
* 1 cup chopped cooked turkey
* 1/3 cup frozen peas, thawed
* salt and pepper to taste

In a large skillet over medium low heat, cook butter until golden brown. Saute mushrooms until tender. Stir in flour until smooth. Slowly whisk in broth, and cook until slightly thickened. Stir in cream, turkey and peas. Reduce heat to low, and cook until thickened. Season with salt and pepper. Serve over egg noodles or toasted bread. (I like using toasted corn bread).

Open Faced Hot Turkey Sandwich

Use up left over turkey, gravy, dressing, and mashed potatoes by making hot turkey sandwiches.

Reheat all ingredients and make some toasted bread. Butter the toast and slice at the bias (diagonal cut).

Plate by placing a scoop of mashed potatoes in the center of a dinner plate. Top this with a scoop of dressing. Add slices of roast turkey. Place a triangle of toast on either side of the mashed potatoes. Top the turkey with a generous scoop of gravy.

Herbed Turkey Tetrazzini

Tetrazzini is an American dish that usually includes a non-red meat cooked with mushrooms and almonds in a cream and Parmesan sauce flavored with wine.

1/4 cup chopped onion
1/4 cup fresh mushrooms
1/4 cup flour
1/4 cup of butter, margarine, or olive oil
1 cup milk
1 cup chicken broth
1 Tbsp chopped fresh parsley
1 tsp dried whole tarragon
1/8 tsp pepper
1 dash of ground nutmeg
2-1/2 cups cooked spaghetti
1-1/2 cups turkey, cooked/chopped
1/2 cup shredded Swiss cheese divided
lemon slice halves
red pepper strips

Cook the onions and mushrooms in the margarine or butter or olive oil until tender over high heat. Stir in flour and cook for one minute. Stir in milk and chicken broth. Reduce heat to medium high and stir constantly to avoid burning. Cook until the mixture is thick. Add
Stir in parsley, tarragon, pepper and nutmeg. Stir in spaghetti, turkey, and half of the cheese.

Pour into a greased 1-1/2 quart casserole bake at 350 for 20 minutes. Sprinkle remaining cheese over the top and bake an additional 5 minutes. Garnish with parsley, lemon slices, and pepper strips.

Turkey Nachos

1 cup of leftover roast turkey meat, shredded
1 1/2 tablespoons fresh lime juice
2 tablespoons olive oil (or vegetable oil)
3 bell peppers (preferably red and orange), finely chopped
1 garlic clove, minced
1/4 teaspoon ground cumin
1 teaspoon dried oregano, crumbled
1 (15- to 16-oz) can black beans, drained
4 oz corn tortilla chips
2 cups grated Pepper Jack cheese (8 oz)
1/4 cup chopped scallion greens
1/2 cup chopped fresh cilantro
1 cup sour cream
2 to 3 teaspoons finely chopped pickled jalapeño
Accompaniment: tomato salsa

Preheat oven to 450°F.

Toss the turkey with lime juice and season with salt and pepper.

Sauté bell peppers in 1 1/2 tablespoons of olive oil over high heat, stirring cooked. Remove the bell peppers. Heat the remaining 1/2 tablespoon oil in skillet over moderate heat and cook the garlic, cumin, and oregano for one minute. Stir in the beans and cook until heated. Season to taste with salt and pepper.

Layer the tortilla chips in a baking dish. Cover with sautéed peppers, beans, turkey, cheese, scallion, and cilantro. Repeat this process to add a second layer.

Bake the nachos in a 350 degree Fahrenheit oven for 5-10 minutes.

Stir together sour cream and jalapeño to taste and serve on the side along with salsa.

Turkey Frittata

Ingredients

• 6 eggs
• 1/3 cup milk
• 1 Tbsp. spicy brown mustard
• 1/2 tsp. salt
• 1/8 tsp. ground black pepper
• 1 Tbsp. olive oil
• 2 cups shredded hash brown potatoes
• 1 cup chopped-up leftover turkey
• 1/2 cup sliced green onions
• 1/2 cup (2 ounces) shredded cheese: Cheddar, Provolone, or Swiss

Directions

Beat eggs in a bowl. Stir in milk, mustard, salt and pepper. Set aside.

Heat oil in large nonstick skillet over medium heat. Add potatoes and cook until lightly browned. Stir in turkey and onions. Reduce heat to low, cover and cook for 3 minutes.

Pour the eggs over the potato mixture. Cover and cook until the eggs are set. Lift edges so uncooked egg flows to bottom of skillet. Sprinkle with cheese; cover and cook until cheese melts and frittata is set. Cut into wedges and serve.

Cranberry Smoothie

Add the following to a blender:

* 8 ounces of cranberry salad
* 1/2 cup of pineapple juice
* 6 oz. container of yogurt (cherry or pineapple)
* 1 banana
* 1 cup of ice

Blend the mixture until the ice is thoroughly ground. If the mixture is too thick, add a bit of pineapple juice. If you'd like a thicker mixture, add more ice.

Turkey Bolhinas

1 1/4 cup milk
3 1/2 tablespoons butter
3 1/2 tablespoons flour
1 cup of leftover turkey, finely chopped
1 teaspoon of cumin
1 teaspoon of coriander powder
2 teaspoons of fresh parsley, finely chopped
Pinch of nutmeg
Pinch of salt and pepper
1 egg, beaten
Breadcrumbs
vegetable oil

Mix the flour and milk. Heat this mixture in a sauce pan. Add the butter. Stir frequently until the Bechamel sauce thickens. Season with herbs and salt/pepper to taste. Stir in the turkey.

Take a spoonful of the mixture and roll into balls. Dip each ball in the egg mixture and roll in bread crumbs until well covered.

Fry the balls in hot oil for 4-5 minutes until they are browned and crisp.

Turkey Stroganoff

* 1 cup of sliced left over turkey
* 2 teaspoons of butter or margarine
* 1 small onion, halved and sliced
* 8 ounces sliced mushrooms
* 1/2 cup sour cream
* 1/2 cup sliced green onions

Heat the butter in a large skillet over medium heat. Add the onion and mushrooms. Cook for 5 to 7 minutes until the onions are tender. Add sour cream and turkey. Stir to blend. Season with alt and pepper to taste. Serve over egg noodles or steamed white rice and garnish with green onions.

Creamy Mashed Potatoes

3 cups hot mashed potatoes
1 cup sour cream
1/4 cup milk
1/4 teaspoon garlic powder
1 1/3 cup of canned french fried onions
1 cup shredded cheddar cheese

Preheat oven to 350. Combine the mashed potatoes, sour cream, milk and garlic powder in large bowl; mix well.

Spoon half the mixture into a baking dish. Sprinkle with 2/3 cup French fried onions and 1/2 cup cheese. Pour the remaining potato mixture on top and spread evenly. Bake for 30 minutes. Top with remaining onions and cheese. Bake 5 minutes longer, or until onions are golden.

Absolutely!

Use the bone to make ham soup.

Put the ham bone in a crock pot with dried navy beans. Fill the crock pot with water and set the temperature low. Let it cook overnight.

Transfer the cooked navy beans to a pot with the ham broth. Add chopped carrots and onions. Cook until they're tender. Season to taste with salt and pepper.
